Thanks everyone for all the inspiration and help-
I shoot mostly for print not for the web, so should I convert my RAW files to JPEG or TIFF?

When and why do you change the Image Mode from 12bit to 8 bit? what is this doing?

in 12 bit mode you capture a lot more color detail. It will make a big difference. TIFF vs JPEG ... what kind of printing are you doing? If it is magazine calender or work they may ask you for TIFF.... if your making photographic prints I use jpg with min. compression

since you are a Nikon person:
convert to Tiff with Nikon Capture, so that your raw files have all camera settings applied.
open Tiff in PS, process, save as PSD. Print PSD.
from your psd, you can creat all the jpg copies you need.

hmmm, interesting, can you even send a 12 bit file to a lab? for some reason I thought you had to convert it to 8bit right after you move it into photoshop??

it all depends on what size you're printing.
usually, a printer will tell you what they prefer.
i've found that if you can have a 300dpi @ 8bit, you're good.
but again, it all depends on what you're aiming to do.
if you have billboard prints, you can get away with something like 72dpi or even less.
if you're doing CD layouts, 300dpi is standard.
