When I convert a RAW file to jpeg, I am given three jpeg format options.

#1 Baseline "standard"
#2 Baseline "optimized"
#3 Progressive

In the book that I have, it didn't really say anything about these options, so I was hoping someone more well informed than me could shed some light on this subject.

These options are basically given to you depending on what you plan to do with your photo.
You can use the "standard" for just about all your photos. The "progressive" which-if I remember correctly- was mainly use to download photos from the top-down on a monitor and for dial up connections etc.
You can just stay with the "standard" option. Depending on wether you just want to email or show your photos on the web you can make your adjustments of quality of your photos by using the slider and set your file size.
Medium to low is fine for the web. If you want to print, then large to maximum.
I hope this helps and someone else with a better teaching method may get on later and help you I'm sure. There are plenty of wizards on here when it comes to this techie stuff.
