Here's my first attempt at adding textures to a photo. I think his face is a little off on the color, but for those that do this often, how do I make it better?

I like the feel of the picture, I agree the skin needs less texture. Here is a great tutorial http://www.redleafboutique.com/tutorials/

I've always wanted to do certain pictures so they look like an oil painting instead of a photo.

Also-
Not photography, just art, but I once saw a jig saw puzzle of a nice landscape that a guy put together and glued down and then framed as a wall picture. It was a very nice effect and looked good.
