I would think that I wouldn't have too much trouble with taking pictures in a tourist type city, but does anyone know which are the best hotels to take pictures in (free of charge) and I wouldn't get harassed by the security for doing so? Which ones to avoid like the plague?

I dont know what type of pictures you were looking to take. I assume there no bridals, but if you just want to shoot some candids of family and friends, the Hyatt Regency on the riverwalk downtown is a nice place to start. They have a nice lobby area and the lighting is pretty good since some natural light penetrates inside. Hope this helps you out.

I was looking for some interesting compositions (with or without people). Specifically I was hoping for some nice architecture, spiral stairs, places that have nice naturally lit areas so that I can play with the shadows... There are other things that I am looking for but would rather show those as results after I get the capture...

I thought you were looking for a lobby area for candids. There area a handful of hotels with nice architecture. In fact I did a lunch run to a few of the hotels downtown once and no one really stopped me. I guess they assumed I was a guest. I didnt bother anyone though, I just went in and shot a few pictures of what I thought was interesting.
You will want to try the St Anthony, Menger, and Gunter hotels which are some of the older and nicer hotels with some nice interior Architecture.
I might just make another lunch run to see how these lobbies look like during the xmas season.
I hope you have some good luck in getting some nice shots.

I have to agree with the Gunter. I would also recommend the Valencia and the Emily Morgan downtown.

Thanks for the suggestions...I don't know if I will be able to get down there before the Christmas break.

I would think that it would be really busy at this time of year, correct?

I haven't been downtown in sometime now, so I don't know how the tourism biz is doing...
