Chris, this is probably because you selected the option when you created the gallery. Once the gallery is created, any subsequent uploads will take the watermark selected. But it's easy to fix!
1) Go to the gallery that has PROOF (smugmug's default watermark)
2) Tools >> More (under the "Many Photos" heading) >> Watermarking
3) Leave the options as is, but select the "remove" radio button
4) Click on the "select all" button and then click on the "watermark" button
That's it, this process will actually REMOVE the proof watermark that you are seeing. You should get a message that says they are being removed. That can take a few minutes. But once it's done, you can follow the same process to add your professional watermark. Except you will be selecting the "add" radio button and be sure to select the right watermark in the drop down menu (not "Smugmug"). If you choose "Smugmug", you'll be back at square one.
TIP: If you are planning on uploading other images, be sure to take a look at the Gallery Settings and select the correct default watermark.
