Your camera has exposure compensation (the +/-) button. If you are shooting in any mode other than manual this will make the camera over (+) or under(-) expose the scene in relation to what it thinks the scene should be metered at. Cameras try for a middle ground, referred to as 18% gray, in pretty much every situation. Unfortunately this has the effect like I described, where white comes out gray (underexposed), and black comes out gray (overexposed). You can compensate for that by increasing the exposure value to get your whites white, or decreasing the exposure value to get your blacks black.
