Just like any large company, and many small ones, you WILL encounter problems.

I had a traumatic experience with 1and1 and vowed to myself to tell anyone that mentions them how bad they suck, have you ever had a super bad experience with a company, they had my site locked down for 5 days, just because they could. they are evil , beware of 1and1

1and1 is a joke.. but then again, if you're only looking at hosting a simple site for your photography portfolio and a blog, pretty much any host would do...

The problem with 1and1/dreamhost/etc and other large and cheap hosts is shared hosting along with overselling. They simply cram hundreds of sites/users in to the same box without dedicated resources allocated. This is fine for the most part, but it's only a matter of time before one of those sites you share the box start getting busy and/or resource hogging... making your site slow and unresponsive in the process. The other is, these are 'automated' and 'simplified' installations (again this is OK for a simple site and blog)... but these simplified systems, you trade off a lot of freedoms.

The support problem comes up because of this... Since you have limited or no admin privileges, anything exceptional you try to do on your site or if something breaks, it's not possible and useless trying to DIY or debug problems your self, leaving no option but having the hosting company fix everything for you (even if you wanted or could do it your self).

1and1/dreamhost/etc, these are kind of like owning a cheap P&S vs. a nice DSLR.
