I see no one answered your question.
I don't shoot a lot of weddings, but when I do there is a reason for everything I carry/take. Like someone else said, the less you have to keep up with, the less you have to possibly get broken/damaged/stolen/lost.
But to do a great job, you need great equipment sometimes.
2 cameras- because it is eliminates changing lenses often or as a backup. Never have just 1 camera for such an important event.
2 flashes- same reason
Lenses- same reason, plus you need fast for those dark, funky lighting, shots. And believe me I have never been in a church that did not have a spot you needed to shoot where there happen to be bad or no light.
You need something to cover group shots, alter scenes, dance shots, candids at the reception. You also want some really good flower, ring, or detail shots. That covers the main lenses.
My list has changed over the years. Currently it is:
Rolling bag with D3,
Tamron 17-35mm,
Tamron 28-75mm,
T 90 macro,
Nikon 70-200mm VR,
Nikon 35mm.
sb800
memory cards
Extra bag nearby,
D200,
Nikon 17-50mm,
Nikon 35mm,
sb600,
gary fong, extra batteries, extra memory cards, extension cord, safety pins, black gaffer tape, and a few other little things.
Things are changed around as I need. But I try to keep least amount of weight on me beyond my D3 and sb800, extra memory card in pocket. I also will often arrive early enough to see if I need to bring in a step ladder for formals. I am short. LOL
